sprite waffles

you can make it vegan and / or dairy free

I make this all the time. You can make the dry ingredient mixture ahead of time to speed up the process. No way in hell is this sponsored, dawg. Let me know how to improve.

  • 2 1/2 cups flour

  • 6 tbsp sugar

  • 1 tbsp baking powder

  • 1 tbsp salt

  • 7 tbsp olive oil

  • 2 eggs or substitute

  • 1/2 cup milk (or other milk) or substitute

  • 1/2 cup sprite

  • 1 tbsp vanilla extract

Substitutes for eggs / milk

  • you can abolish eggs simply by adding more sprite + olive oil (their purpose is to bind the batter together)

  • you don't need milk, you can just add way more sprite... and olive oil

  • if you don't like olive oil or are allergic you can use whatever. it's to make sure waffles don't stick to the iron

  1. Your dry ingredients. Flour, sugar, baking powder, salt. Add to big bowl, stir it togehter.

  2. Add your wet ingredients in all at once and stir them together like pig slop, stir, stir, stir.

  3. Once it's damn smooth, not too runny not too thick, wait 10 minutes. This lets the batter mix properly - all the soda bubbles mix into the batter to make it nice & fluffy.

Here you can see the ideal consistency:

This shit takes like 10 mins, if you make the dry shit in advance you can just pop in a bottle of Sprite and some vanilla and oil (eggs / milk optional) then it speeds up the process, too. I like having the batter ready for the mornin' and then just have to make some taters and eggs real quick for a good day.
